Zabuton translates to “little pillow” in Japanese and comes from the Chuck area. As one of our Butcher’s Cuts, it’s less well known, but also one of the richest most delicious steaks in our portfolio. Thanks to our Mishima Reserve Method, it’s got a perfect balance of tenderness and tooth.

About the Zabuton

Like that hidden patch of chanterelles your foraging friends led you to deep in a forest glade, the Zabuton has always been a secret cache of richness known only by your butcher. It’s one our favorite steaks. In a world where anything and everything can be had by almost anyone and everyone, where do the heart-thumping wonders lurk? Your friends will wonder how you ever discovered it. Even the name seems cloaked with intrigue. Something one might come upon among the stalls of an old market, in a village you’d never visited before. The old butcher, honing his knife on a steel, senses your curiosity; and without needing to be asked, whispers, “Zabuton.”

Sustainably Packaged

We have two important objectives in preparing your order for shipment. First and foremost, that your meat arrives in perfect condition. Second, that the packaging be as environmentally friendly as possible. We seal each steak in its own airtight wrapper and use dry ice to ensure everything stays frozen or near-frozen in transit. The insulating liner is water-soluble and can literally be washed down the drain or composted, and the outer shipping carton is fully recyclable, post-consumer cardboard.
