The Cap of Ribeye comes from deconstructing the traditional Ribeye to isolate the “flavor curve” that forms the cap, and trimmed of excess fat. It is an incomparably indulgent cut of extremely tender beef when ranked for richness, volume of juice, and overall beefy flavor.
